Stefano Balduccio, the new chef at Borsalino, presents his menu of classical Italian cooking and guests now have the opportunity to try traditional dishes from more than ten Italian provinces, including Piedmont, Umbria, Naples, Sicily, Sardinia, Genoa and Palermo.

A true Italian dish, Stefano believes, is classical, simple, and for the recipe to be authentic, has to be cooked strictly according to its regional origin, right down to the use of ingredients from that particular region. Food lovers can enjoy Fillet of Swordfish alla Siciliana, Insalata Toscana, Veal Milanese and for dessert, Cannoli and Cassata.
